Whole Wheat Apple Nut Bread

Ingredients:
- 1 ½ cups whole wheat flour
- 1/3 cup vegetable oil
- ¾ cup all-purpose flour
- 1 cup plain yogurt
- ½ cup brown sugar
- 1 large egg
- 3 teaspoons baking powder
- ½ cup MNPG Pecan Pieces
- ½ teaspoon baking soda
- 1 tablespoon wheat germ
- 1 teaspoon salt
- 1/3 cup raisins
- 1 teaspoon ground cinnamon
- 1 cup applesauce
*Yield: 1 loaf
Directions:
- Preheat oven to 350°F and spray a 1.5-quart loaf pan (9×5”) with non-stick cooking spray.
- Sift together all-purpose flour, baking powder, baking soda, salt and cinnamon in a bowl. Stir in whole wheat flour, brown sugar and raisins.
- In a separate bowl, beat egg and oil and stir in yogurt, applesauce and pecans.
- Gently stir applesauce mixture into flour mixture until dry ingredients are moistened. Do not overmix.
- Pour batter into the loaf pan and sprinkle with wheat germ. Bake in preheated oven for 1 hour or until a toothpick inserted in center comes out clean. Cool in pan for ten minutes. Remove from pan and finish cooling on a rack.
*Makes one loaf.
