Whole Wheat Apple Nut Bread

Ingredients:

  • 1 ½ cups whole wheat flour
  • 1/3 cup vegetable oil
  • ¾ cup all-purpose flour
  • 1 cup plain yogurt
  • ½ cup brown sugar
  • 1 large egg
  • 3 teaspoons baking powder
  • ½ cup MNPG Pecan Pieces
  • ½ teaspoon baking soda
  • 1 tablespoon wheat germ
  • 1 teaspoon salt
  • 1/3 cup raisins
  • 1 teaspoon ground cinnamon
  • 1 cup applesauce

*Yield: 1 loaf

Directions:

  1. Preheat oven to 350°F and spray a 1.5-quart loaf pan (9×5”) with non-stick cooking spray.
  2. Sift together all-purpose flour, baking powder, baking soda, salt and cinnamon in a bowl. Stir in whole wheat flour, brown sugar and raisins.
  3. In a separate bowl, beat egg and oil and stir in yogurt, applesauce and pecans.
  4. Gently stir applesauce mixture into flour mixture until dry ingredients are moistened. Do not overmix.
  5. Pour batter into the loaf pan and sprinkle with wheat germ. Bake in preheated oven for 1 hour or until a toothpick inserted in center comes out clean. Cool in pan for ten minutes. Remove from pan and finish cooling on a rack.

*Makes one loaf.
