Pecan Waffles

Ingredients:
For Waffles
- 2 large eggs, beaten until fluffy
- 2 cups all-purpose flour
- 1 ¾ cups milk
- ½ cup vegetable oil
- 1 tablespoon white sugar
- 4 teaspoons baking powder
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup MNPG Pecan Halves (can be substituted with MNPG’s Pecan Pieces)
For Creamy Cinnamon Syrup:
- 1 can sweetened condensed milk
- 1 tablespoon ground cinnamon (adjust amount as desired)
- 1 teaspoon pure vanilla extract
- 4 tablespoons local honey
* Yield: 6 servings
Directions:
- Preheat waffle iron.
- Stir all the ingredients into the beaten egg mixture until smooth. Do not overmix.
- Spray preheated iron with non-stick cooking spray. Gently pour the waffle mix onto the waffle iron.
- Cook until golden brown.
- Meanwhile, combine all the ingredients for the creamy syrup in a medium sauce pan and gently warm the mixture over low heat. Stir constantly to prevent the sauce from scorching or boiling.
- Sprinkle pecans over waffles generously and serve with cream sauce.
