Pecan Waffles

Ingredients:

For Waffles

  • 2 large eggs, beaten until fluffy
  • 2 cups all-purpose flour
  • 1 ¾ cups milk
  • ½ cup vegetable oil
  • 1 tablespoon white sugar
  • 4 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup MNPG Pecan Halves (can be substituted with MNPG’s Pecan Pieces)

 

For Creamy Cinnamon Syrup:

  • 1 can sweetened condensed milk
  • 1 tablespoon ground cinnamon (adjust amount as desired)
  • 1 teaspoon pure vanilla extract
  • 4 tablespoons local honey

Yield: 6 servings

Directions:

  • Preheat waffle iron.
  • Stir all the ingredients into the beaten egg mixture until smooth. Do not overmix.
  • Spray preheated iron with non-stick cooking spray. Gently pour the waffle mix onto the waffle iron.
  • Cook until golden brown.
  • Meanwhile, combine all the ingredients for the creamy syrup in a medium sauce pan and gently warm the mixture over low heat. Stir constantly to prevent the sauce from scorching or boiling.
  • Sprinkle pecans over waffles generously and serve with cream sauce.
