Pecan Tassies

Tassie Shells
- 8 oz cream cheese
- 1/2 cup butter, soften to room temperature
- 1 cup all-purpose flour, sifted
- Cooking spray
Tassie Filling
- 1 cup MNPG Pecan Pieces
- 2 large eggs, beaten
- 1 cup brown sugar
- 1 teaspoon pure vanilla extract
- 1 tablespoon butter
Directions:
- Preheat oven to 325°F.
For Tassie Shells:
- Blend softened cream cheese and butter in a bowl.
- Mix flour into the above mixture and chill for at least an hour.
- Spray muffin tin with non-stick cooking spray.
- Shape the mixture into 24 or more little balls and place in the muffin tin. Press around cup with finger to shape.
For Tassie Filling:
- Mix eggs, sugar, vanilla and butter.
- Sprinkle a few pecan pieces on the bottom of each cup.
- Fill each cup with about 1 tablespoon filling. Sprinkle remaining pieces on the top of filling.
- Bake for 20 minutes or until filling is set.
