Chocolate Chip Pecan Banana Bread

Ingredients:
- ½ cup unsalted butter, softened
- 2/3 cup granulated white sugar
- 2 large eggs
- 3 bananas, very ripe
- 1 teaspoon pure vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon nutmeg
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon fine salt
- ½ cup MNPG Pecan Pieces
- 1 cup semisweet chocolate chips
Directions:
- Preheat oven to 350˚F.
- Butter and flour a 9”x5” bread loaf pan.
- In a mixing bowl, cream together ½ cup softened butter and 2/3 cup sugar. Add the eggs and whisk until thoroughly mixed.
- Mash bananas with a fork until consistency of chunky applesauce.
- Add mashed bananas to the mixing bowl along with vanilla extract, cinnamon and nutmeg. Mix until blended.
- In a separate bowl, whisk together flour, baking soda and salt.
- Add the dry ingredients to the mixing bowl and stir until incorporated.
- Fold in ¾ cup chocolate chips and pecan pieces, then transfer mixture to a prepared bread pan.
- Sprinkle remaining ¼ cup chocolate over the top.
- Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
- Let banana bread rest for 10 minutes before transferring to a wire rack to cool.
- Enjoy immediately!
